Gearing-up for HomeBuilders
Have you seen the “Back to School” sale flyers yet? Every year about this time the newspapers are full of them. Why? Because your children can’t face the new school year unprepared. They need the right gear—those new pencils, notebooks, crayons, and folders —that help them do their best.
Just as fall brings a new school year, it also brings the start of many new activities for churches. Rhubarb Cream Pie
Crust for a 9” One-Crust Pie
FILLING
2 cups diced fresh rhubarb (do not use frozen rhubarb)
3 egg yolks
½ cup milk
1 cup sugar
2 tablespoons all purpose flour
½ teaspoon salt
Heat oven to 400º F. Press the crust into a 9 or 10 inch pie plate. Place rhubarb in pastry-lined pan. In a small bowl beat egg yolks until smooth. Stir in milk and add remaining filling ingredients; blend well. Pour egg mixture over the rhubarb.
Bake at 400º F. for 10 minutes. Reduce oven temperature to 350º F. and bake for an additional 40 minutes.
MERINGUE
3 egg whites
¼ teaspoon cream of tartar
½ teaspoon vanilla
6 tablespoons sugar
In a small deep bowl beat egg whites, cream of tartar and vanilla at medium speed until soft peaks form. Gradually add the sugar 1 tablespoon at a time. Beat on high until stiff glossy peaks form and sugar is dissolved. Spoon meringue onto the hot filling being careful to spread to the edge of the crust to seal well and prevent shrinkage.
Bake at 350º F. for 15-20 minutes or until light golden brown.
